Time tracking doesn't seem to be calculating correctly when the original estimate is edited. The time logged and time remaining goes all out of wack and you can't edit the time logged to correct it.

Remaining time spent won't change automatically, when estimated has been changed.
As a work around, you can set remaining manually while log the work.

Calculation is based on the Original Estimate when the first log is entered (this field is ORIGINAL ESTIMATE so it should not be edited after that users started their work on the activity). If something is wrong about estimation during task execution you should modify the remaing estimation.

Thank you for your swift response and it makes sense. But now that I have already made the edit to the original estimate, it doesn't look like I can go back and the calculation always looks wrong/broken. I can enter the remaining time, but the logged time is wrong and it won't let me edit that field. Whatever time I put in logged, it isn't reading that time correctly.
See the screenshot below. The original estimate was 1 day, with 6 hours logged, but then I went and changed the original estimate to 4 days, which is when things started looking all funny. I then changed the original estimate back to 1 day, but still, the calcs didn't add up. I manually added the time remaining to 3 days, 2 hours, but when I try manually put 6h for logged, it won't accept it and pushes out 4 days, 4 hours.
