I'm trying to understand where to make adjustments so that I can add in Time estimates to tasks.
How do I configure the Story point so it is a Time Estimate, instead of a story point number?
Our end game is that we want to be able to track time against a task to see how well we estimated.
I have configured the tasks per the screenshot.

Per your description, it seems you are trying to measure the estimation of your issue based on time instead of Story Points. Is that correct?
Please, allow me to bring you some concepts about estimations in Jira so we can confirm we are on the same page here:
Basically, there are two ways to calculate your project estimations and track your team progress: Tim tracking and Story Points. Usually, users choose to use one of those options, although you can use both.
The time tracking is based in three fields:
1 - Original Time Estimate - This is the initial time estimated to an issue.
2 - Time Spent - This is the time logged to your issues so far.
3 - Remaining Estimate - This the estimation of how much time is still required to finish your issue, considering the time logged to it. Basically, this field will show the Original estimate minus the Time Spent.
The Story points field is a type of estimation that uses its own value, not based on time.

As mentioned before, the Story Point estimate is not based on time but in a unit with his own weight defined by you. That being said, if you want to track your progress only based on time, I suggest you use the Time tracking functionality. Check the documentation below to know how you can configure it:
