No Atlassian won’t delete the fields for you just because the new “unused field optimization” says they’re unused.
What this feature is really about is reducing field bloat in configuration, not silently destroying your data.
What happens if you do nothing:
Atlassian may recommend fields to clean up.
But the custom field object itself still exists in Jira, and so does any data already stored in issues.
So: “unused” ≠ “will be deleted”.
What actually deletes a field:
A field only gets deleted when an admin explicitly deletes it (either manually, or via whatever cleanup workflow Atlassian provides that requires confirmation).

No, Atlassian won't delete any data from your site. Site optimizer is a suggestion for you as a admin what piece of config you can optimize. In site optimizer you can find what you can delete and compare this with max limits offered by Atlassian.
