Currently all my tasks are mixed and I want them sorted either by due date or by priority. Is that possible?

The screen image you provided is the Manage Custom Filters screen which is specific to a default board for a Team Managed project. The information that @Nic Brough -Adaptavist- provided applies only to boards for Company Managed projects or boards you have created manually for a Team Managed project.
You can tell which type of project you have by looking at the bottom of the navigation pane on the left.
You cannot modify the board filter for the default board for a Team Managed project.
If you want to see the information displayed in a different order you will have to manually create another board for the Team Managed project. You will have to create a SAved Filter to retrieve the issues from the Team Managed project and include the ordering option you want. Then you can create a board from the Saved Filter. The functionality of the board will be different than what you see in the default board for the Team Managed project.
The board filter determines sort order on the board and in the backlog. It is usually set to order by rank, but you can change it to whatever you want.
If you change it though, you won't be able to rank issues.

Go to board configuration then general, where the filter is displayed, then you can click on that to go to the filter to edit it.
