Hello,
I want to have a project board for my self with some sensitive tasks on there, i also want select people to be able to create tasks on my board and be able to see and update only the tasks that they create, I believe this was possible on on-prem Jira as we had a board that worked like that but I cant seem to find a way to achieve this on Jira Cloud. Can anyone help?

First, to be clear, tasks are created in Projects, not on Boards. Boards are just a way to view the issues in a project. Team Managed projects have boards that include all issues in a single project. Boards are manually created for Company Managed projects and are based on save filters that can encompass all issues in a single project, or a subset of issues in a project, or issues in multiple projects.
Second, are you working with a Company Managed project or a Team Managed project? Management of user permissions in the two types of projects is vastly different.
One way to achieve what you want is to use a Service Management project instead of a Software project, and treat the other people as Customers. They would be able to create issues through the Service Management portal and would be able to see only the issues they created and the ones to which they were added as Participants. You, as a Service Team Member, would have full access to all issues. Service Management is an additional product though, and would add to the cost of your subscription.
Other than that I have not specifically tried to implement this type of permission management. I have seen posts that talk about "Issue Security Configuration". You might search for that topic to see if it will help you.
