It is outrageous that in a large professional software product like Jira, I suddenly can no longer find my sections and projects. Shameful.

Atlassian keeps on making the enhancements over the time which includes UI changes. Projects are called Spaces now and you will find lot of information on the left sidebar which you can customize as well.

Nothing has been deleted. This is a terminology change in Jira Cloud's new navigation: Projects are now called Spaces, the same way issues are now called work items. Your projects are still there, just listed under Spaces in the left sidebar. If you do not see Spaces, open the More menu and turn it on under Customize sidebar.
The same rename was confirmed by two Community Champions here: No project section.

The naming has changed a little recently.
With all due respect, if something suddenly disappears or you cannot find it anymore, this is usually not something the Community can verify from the outside. In many cases, sudden visibility changes are related to permissions or access changes.
You can check your projects here:
https://yourdomain/jira/projects
If the project does not appear there, then it is very likely that your permissions or access to that project have changed.
In that case, please check with your Jira/site admin, because only they can verify the project permissions and your access.
