while creating the new defect 'Resolution' field is showing default value 'Fixed' and after the ticket is created it is still showing resolution = 'Fixed' when the defect is in 'OPEN' status
Remove the resolution field from the "create issue" screen. (And "edit" if you've got it on there as well).
Resolution should only ever be used on a transition screen.

You will need to make a decision. Either you want unresolved issues to be unresolved until closed, or you want the resolution on the create screen so that all your issues are created as resolved.
I think you want the option with the data that makes sense, so you need to remove the resolution from create and edit.
To fix the screens, go to the project where this is failing, and look to the bottom left for "project settings". Find the "screens" area in there and look at the "screen schemes" - there may be more than one, you'll need to repeat the next bit for each screen scheme if there are.
Click on the name of the screen scheme to open it up. You should see a table with between one and four lines. There will always be a line for "default", but you may also see "create", "edit" and "view". Each line will name a screen (these may be shared - my current project has screen-1 for "create", and screen-2 for default, view and edit). You can click on the name of each screen to take you to the list of fields on it. From which you should remove resolution.

I made the same mistake the very first time I run into Jira... Nick is 100% right though.
If you're worried about not being able to edit the resolution I would advise you to add a final transition from your closed status to itself called "change resolution" or whatever suits you. Create a screen where you can edit the resolution and assign that screen to this final transition.
This are only suggestions, of course. You set up your system as you see fit but it could be wise to listen to what someone as experienced as @Nic Brough -Adaptavist- has to say about it.
