I would like to set up an automation such that an e-mail is sent 5 days before the 20th day of the current month.
How can i do?

When you say "5 days before the 20th day of the current month", that means it is 15th of every month.
You can create a scheduled automation rule as below
Create a trigger : Scheduled.
Select 15th as shown in image.
Then: Send Email.
Select required recipients, add summary and description and publish the rule.
I'm in the JIRA service desk, there's no possibility to select that option.. can you send me JQL code?

If you are using Jira service desk cloud instance, then it is same as my screenshot. For this particular requirement, you don't need any JQLs.
To access the project automation, you should be the Project admin.
To access automation tab, go to your service desk project --> Project settings --> Automation.
Please note: If your jira url has *atlassian.net in it, then it is cloud.
Example: https://abcd.atlassian.net/jira/projects?selectedProjectType=service_desk
If not, then you are using Jira servicedesk data center or server versions.
