Existing projects started showing new statuses, when checking previous statuses are no longer available, how can I check who made these changes, or if it was part of a general jira update?
You can always see if there is something available in the audit log.

It might not have all the details but at least you can see who changed the workflow last and go check with them.

Also, you can check the changelog using an app like Issue History. It lets you view who and when made each change on Jira issues. If you interesting who change status - select in the column manager status field. To sort data and view changes for one issue - export data and analyze it using Microsoft Excel or Google Spreadsheet.

In brief - someone w/ the necessary permissions has changed the statuses w/o checking w/ all vested parties. :-(
There are missing details that would allow me to give you precise answer here, e.g. classic vs. NG project but let me give it a go.
I suspect that there is a shared workflow that is being used by multiple projects. Unintentionally (?), another admin wanting to change the statuses/workflow for one project edited the workflow and updated the statuses. Once published, the updated workflow now applies to all project/issuetype that share the workflow. The proper way to have made the changes would have been to create a copy (or create from scratch) the workflow, rename, edit and associate the the specific project/issuetypes. Hopefully, this individual made a copy of the original before simply replacing. If not then you would need to recreate the previous workflow and associated to the project/issuetypes as desired.
