What is a good field to store a team or department in? These teams do not have access to Jira but we want to be able to report on the requests and which Line of Businesses they are from.
And then is there a way to add a date field that is the original date it was first created in another tracking system.

For you "team" and "department" fields a Jira Administrator can create Selection List custom fields at a global level and provide a list of selectable values. Such fields can be used in both Company managed and Team managed projects.
And yes, a Jira Admin can also create a custom Date type field.

If you are working with Team Managed projects it is possible for Project Administrators to create custom fields of comparable types where the fields are local to the project. So if such a selection list field was created locally in a Team managed project, then that field would be available only for that project and the selectable values would be specific to that project.
