Priority types for different Issues

I'm looking to remove Highest and Lowest options for Priority Types for production defects and bugs. I'd like to map these to high and low (and no longer use highest and lowest). Can someone help me figure this out?

There is no way to do this.  Priority lists are global, the same for all issue types (and all projects on Cloud)
