Hi,
I would like to check if it is possible to restrict the visibility of the following fields in Jira cloud:
- Assignee
- Comments
- Logged working hours
Is it possible to configure the permission to see these fields to a specific group of users?
If so, could you please point me to the related documentation?

However, most of the posts talk about using Behaviors from Scriptrunner for Jira. But, unfortunately Behaviors are server only. You can check out the documentation for Issue Level Security , Control access to your issues on next-gen using Issue Restrictions and see if this is something you can implement to control which user or group of users can view an issue.

It's not possible to restrict visibility of fields - just issues themselves (using issue security).
Field-level security has been suggested before but it would require a significant work commitment and complexity - see: JRASERVER-1330
There are open suggestions though if you'd like to vote on them - see: JRACLOUD-69298

Jira does not have field level security.
You can control who can change the assignee, make comments and log work though - these are all individual permissions in the permission scheme for the project.
