Please tell me if anyone knows if there are any convenient plugins in Jira to show the original estimate of each employee in one place?
Perhaps there are plugins to somehow show the original estimate and time tracking of each employee, analyze the time estimation of each spiff employee and so on?

if you're open to solutions from the Atlassian Marketplace, I think you'd like the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of advanced features, including the ability to group your issues by any issue field(s), as well as sum-ups. With these, you can build a view like the one you're looking for in just a couple of clicks:
This works the same way with any other fields, and also plays nicely with JXL's other advanced features, such as support for (configurable) issue hierarchies, bulk-editing via copy/paste, or conditional formatting.

If you are considering using a plugin, I would suggest ActivityTimeline. This app provides resource planning and availability on a timeline view.
You can track task progress, workload, and availability for each employee taking into consideration the part-time, full-time, or even different work schemes for users, and holidays.
Workload or availability could be calculated for individuals or teams on the same view. You can create the work schedule and set the number of hours (or story points) for team members.

I have Two suggestions to get the original estimation of each employee.
Method-1 :
Add "Workload Pie Chart" Gadget to the Dashboard
Set "Assignee" as Statistic Type
Set the "Time filed report on" as Original Estimate
You can select the project in Filter
You will get original estimation of all the users in the project that has been assigned to a ticket
Method-2 :
Use the sumUp for Jira plugin which is similar to the Jira Filter results gadget but additionally shows the sum of your column values.
