I checked all of my settings and have email turned on and the email address is correct, and no matter what event happens (watched event changed or commented, im tagged in a ticket, etc) I am not receiving any emails. I changed from HTML to Text as well and am still not receiving any emails. I do not know how else to troubleshoot this and am unable to contact support for this issue.
This has not been an issue in the past, and the last e-mail I received was on Friday
Turns out to be an outlook issue. Randomly started putting these emails in the junk folder after years with no issues.

Checking your email address on our tools, it didn't return any blocks or bounces.
Then, checking the outgoing email logs, I was able to see that 71 notifications were sent and delivered in the past 7 days.
Please, ask your IT manager to whitelist our domains and IPs to make sure nothing gets blocked:

@Angélica Luz i have reached out to IT regarding this but I will add that no one else at my company is experiencing this issue so I will be surprised if they are able to find an issue on their end. Why would these be displayed as delivered with no errors yet not be delivered? Even if they were blocked by my company policy wouldn’t that return an error?
