No history needed on sprint field

Hello,

Is there any way to delete the history in the sprint field of an issue.

For example, this ticket has been moved several times, and in the sprint field I want to see only the last sprint and not the whole history of sprints :

I do not believe that is possible with out-of-the-box Jira.  Doing so would remove the team's ability to see the symptom that an issue has been in multiple sprints, to consider what is different about the issue to cause carry-over/moves, and to consider improvements to prevent that symptom in the future.

There's no way to do this.  You don't want to either, it would be destroying all your sprint history and render all the reporting useless.
