We are using JIRA's System Tickets, and we allow our employees to email requests to the helpdesk which automatically generate new tickets.
On the JIRA email request form, I'm trying to have "Due date" be a hidden field that defaults to today's date.
However, that preset value only accepts a fixed value like 2019-03-19.
Any ideas?

Dale - I believe that you will have to do this through a app like JSU, scriptrunner or automations for JIRA. JSU and Scriptrunner you would use a postfunction on create in the workflow.
