Multiple sprints active at a given time due to Multiple projects

We have multiple projects running in our current Jira software (Jira 50 users: Academic License; the support on this license ended in 2015), and so we have multiple active sprints at a given point in time. Our sprints are two weeks long, and each of these sprints has their start and end dates. I create a new sprint before I close the active sprint so that all the incompleted stories from that sprint can automatically move to the fresh one I create.

My current Jira version doesn't provide an option to select a new sprint when I close a sprint. Is this a feature available in a newer version? If I forget to create a new sprint, then all the incompleted stories move into backlog, and it becomes very annoying because i will have to manually then sort and move them back.

I would like to also create newer sprints way in advance where I can add my future work stories. But I'm afraid to do it currently, because of the multiple active sprint setup, and how it will impact the incomplete stories.

I would like to hear your solution on this matter.
