Multiple listeners are getting triggered for the version create event without considering the project mapping.

What type of Listener you have? a built-in Jira listener, a ScriptRunner listener, and/or a marketplace app like a “version synchroniser”

You can go tu menu Admin → System → Listeners and review every listener

It's a ScriptRunner listener and the event we use is Version Created.

There are no issues since its built. 

All of a sudden, all the listeners started triggering though the project mappings are there.

Just to be sure I'm understanding the case correctly:

When Version Created event is triggered all the listeners are triggering.
