I was hoping somebody could steer me regarding multi-project setup.

First, what type of project is it?
If it is a Company-managed project, you can create a board with a filter for one of the Epics - something like:
"Epic Link" = ABC-123
where ABC-123 is the key of the Epic.
Then copy the board and change out the filter to use a different filter for a different Epic. For example, the second filter would look like:
"Epic Link" = ABC-456
And so on.

Yes, it's a company managed project.
I've tried the filtering and that works great!
Can I create different types of boards/workflows for each board? Don't think this can be done at the project level within an Epic?

Each project can only have one workflow her issue type. So you couldn’t have multiple boards with multiple workflows but all of them are using the epic issue type. But, you might could alter your workflow for the epic issue tied to be flexible to use the same workflow with multiple boards. Do you have an example of the differences?
