Moving server licences (JIRA, Confluence & Service Desk

Any idea how I could change the Server ID Setting in atlassian licences?

I´ve bought some licenses which I do not use anymore. I would like to use them on another server-id.

Would be happy about instructions.

You actually don't need to change Server IDs on an instance in order to apply new or different license keys.  But that is a common misconception.  If you already have a new license key created you can just apply these directly to the application.   This is true of all the products you listed here.
