I moved an Epic to issue type Bug, but it keeps the Epic color field. Is there a way to remove the Epic color field?

Are you talking about the color block that appears next to the summary?
If so, that is just one "color" attribute used by all issue types. Typically color is set only in Epic issue types, but if you change the issue type to another type, the color field remains set.
There is currently no method to "clear" the color field through the UI, nor through Automation Rules (including using Advanced editing with JSON). Also, "None" and "White" are not available color choices. So there is no way to remove the color block once it has been set.
There is a change request to add more color options which could help if white is made available (or a clear option is added). You can add your vote to it here:

Hi @Nicole Kaiser ,
I don't recall having that issue showing up other than Epic. Perhaps, update the screen to remove the Epic color field from your other issue type would solve this issue.

Can you share the image wherein the Epic Colour is available.
You can actually remove the EPIC Color from the BUG screens (jira admins can do that)
