Hello,
I want to restrict the editing of Fix Version only to certain users. I tried putting restrictions to Resolve issues permissions, but that completely hides the field for users who don't have access to Fix Version.
Is there a way everyone can see the Fix Version, but only certain users can edit it?
This shouldn't be dependent on the issue type, status, etc. but a general restriction.

Jira doesn't natively support setting edit restrictions on individual fields.
If you're willing to consider a third party app, I believe this could be done with the Adaptavist ScriptRunner Behaviours app. Here is a video about how to do it.

Behaviours is free, but it requires the ScriptRunner app which is not free.
It's not possible to do this with Jira out-of-the-box. You will need a plugin like Scriptrunner that will allow you to set behaviors on fields to make them required/hidden/editable based on scripted criteria.
