This is Noelia who want to use Jira with monday.com.
I try to test integration between monday.com and Jira.
I checked the list of Jira fields supported for integration on the Monday.com support page.

On this page, I checked the person, email and link in fields are supported for mapping from monday.com to Jira. But I couldn't find it on custom field list!
I wonder do these field are still supported in Jira or deprecated?
Did they exist before?

The fields you mention are field types on the Monday.com side of the migration. Each tool has its own way of naming things and person, link and email are fields types typical to Monday.
They do not - as such - exist in Jira, but may have an equivalent on the other side. All the documentation is saying is that you should be able to sync a Monday.com field of the named type to Jira. My best guess would be that person may be pretty similar to a Jira user, email can probably be transferred to a text field in Jira and a link could be a url (if it is a link to a web address) or a linked issue (if it is an issue link)
