Presently we are using Jira Server, we will convert from Jira Server to Jira Data Center. Give us some suggestions on how many nodes to use in Jira data center.

You can start with even one node and later your extend as many , as per your requirement.
more nodes can lead to issues, Please enable the nodes as per your requirement only. Please refer below link for more details.

Generally, a node should be sized the same as a single server. As you already have a working server, that's an excellent starting point - spec your nodes to be broadly the same power as your existing server.
How many nodes is a question we can't help you with. A single node does not get you all the benefits of a DC cluster, it's pretty much "the same as server". Adding a node gives you load balancing and failover, but you've not told us why you are going to DC, so we don't even know if you need that.
(A perfectly valid reason for going to DC is "we work in a regulated industry where it is a legal requirement that our software is supported by the vendor, so as Server is going away, we need to move to DC. In this case, a single node replacing your server could well be all you need)
