Jira Issues List has an "Order by" filter with 113 fields!

Those new to the Atlassian Community have posted less than three times. Give them a warm welcome!

And only 10 fields are shown.  I have access to all 113 by "Search", but that requires prior knowledge of what the exact field name is.

How do I choose the list of fields displayed by default?  I want to display the most helpful 10 fields.   Can I also choose the order (presently alphabetic)?
