I can't find the way to take off the "Shared With" Label in the customer portal.

All labels appears in the customer configuration but not this field.

Also how to share a request to individuals by email notifications  ?

Hello Stephane,

Thank you for raising this question.

The option you mentioned (Share With) is provided by the Organizations functionality and can not be removed unless you don't add the users to any organizations.

Ther's a feature request opened to add this ability on JIRA:

Ability to disable/enable the 'Share with customer' button

Please, feel free to vote in the feature request to increase its priority and watch it to receive any updates.

About your second question, you can navigate to your Service Desk Project >  project settings > Customer permissions > flag the option "Any customer, by typing an email address". Performing these steps, you will allow your customers to share their requests with any other individuals which will also receive any notifications.
