Jira (Data center vs Cloud)

Before getting new product i need to know difference in Cloud version of products vs Data center. Now we use data center of this products:

-Jira Software (500 users)

-Confluence (500 users)

-Jira Service Management (100 agent)

What features are not included in cloud versions of this products ? Can you help me to find features that are currently not available in Cloud and features that works a little differently in Cloud version of this products vs data center version.

As the products diverged years ago, any answer to that question is going to be a massive essay, which will just be a rewrite of the atlassian docs.

(Note that Server and DC are pretty much identical in terms of how they work for the end user, but DC has a few additional functions aimed at larger sites - high availabilty clusters, archiving, CDN support etc)
