Is there a way to increase the number of statuses that are displayed while in an object and selecting the pull down menu?

Can you give us some more context - where and what are you doing? And maybe some screenshots.
@Steven Packer I played a bit with this, and it seems like the dropdown within the object view will only show 10 statuses.
It will always show 10, and the sorting is a bit confusing - potentially it's looking at some backend ID of the actual status, and it's sorting by that. If you haven't selected any specific statuses when configuring this particular attribute, it will be a mixture of both global and schema statuses. 👈
There's this feature request that basically asks to increase this number JSDCLOUD-14954: Increase the number of asset statuses shown in the search list. But it would be worth adding a comment that this parameter is also configurable and not fixed.
At the moment, there's no way to configure this, as far as I know.

I think @John Funk is already asking the right first question around context, but based on your follow-up about the display/order itself, I do not think there is a native Assets setting to make that dropdown show more values at once or to define a custom sort order.
What you can control is the set of statuses available for that Status attribute. Atlassian’s docs say the Status attribute uses a combined list of global and schema-specific statuses, and if you do not explicitly limit them, the full list is available. So the practical workaround is usually to reduce the statuses allowed for that attribute rather than trying to change the dropdown behavior itself.
If you need to clean that list up, you can manage statuses globally or at schema level, depending on where they were created.
