We are using the Jira/Confluence cloud version for our company. We would like to install the mobile apps also in our phones.
I would like to research about the difference between the functioning of the apps to the web version. Also about the privacy policy, data collection and other aspects that may impact the compliance of the system in our organization.

The mobile apps can offer most of the functionality of the web, but they are not always expected to provide the exact same experience. One place where this tends to show the most differences is in regards to add-ons in your Cloud site. If you happen to be using features from these add-ons in marketplace, these might work just find in your web UI, but we don't always expect those features to be functional within this mobile app on either the Android or IOS platforms.
I would suggest starting with the getting started guide. There is also a demo video to try to explain the main features of the app.
