On client portal side, clients cant see description of JIRA ticket when they originally reported an issue with a description. It dissapears sometime after they report it and before we review and give them a response.

I remember seeing this issue once, but it was on Jira Cloud, maybe it can also happen to Server. If the request type was removed after the ticket creation, the ticket somehow was still visible in the portal, but not the description, so if that's the case, you can add a request type and check if it will show the description in the portal.
Also, I saw that you created a ticket with our support related to the same question and they are already helping you, so let's focus on the ticket instead and after it's resolved, feel free share the resolution here.
