In there any configurations possible to view JIRA Classic project or Tasks/Issues to display all relevant fields in a tabular form and choose the criteria for the order of display?

Yes. This is done by creating a filter. Click in the search bar and build your filter. Click Columns to choose the desired columns. Click on any column to sort.
