Although I have discarded some custom fields from the issue layout, they still appear on the issue create menu. What is the reason please and how to solve it? for example change reason and case status they are not included in the layout, so why they still appear for me?

Removing fields from the layout will not remove them from the screen that is used for Create issue. So you need to remove the fields from there too. Just go to Project settings > Issues > Screens and select the one for the create issue.
