I vaguely remember when I first setup some new projects, I was asked if I wanted this new project to be included in the search or global search perhaps. I was new to Jira and wasn't sure, so I selected yes.
Now I would like to remove a couple of projects from showing up in our quick search. All those old cards are cluttering the view of the current work that we are searching for.
I have not been able to find a way to remove a project from the quick search, and I'm thinking my only option is to archive the project.

I also believe the only way is to archive the project (or "hide" it by means of permissions) in order to protect it from being searched through quick search. One could say a last resort measure is to delete it.
There is a Suggestion open with Atlassian I could share - but this is to only search for open issues. Think of it as an alternative to your requirement, assuming that it would not show issues from your "old" project.
Theory: the project is not used anymore, therefore the users have closed all those all cards and all cards should not be displayed in quick search as soon as this Suggestion is implemented
In case you want to specifically exclude special projects from quick search there is no option beside what you describe and we considered above - but you could raise another Suggestion on jira.atlassian.com - please feel free to do it if you consider there is value to others, too!

Thanks! I wasn't aware of the "hide" option, I only saw I could "archive" a project. I'll try that before archiving.
I'll also put in a request to have options to add/remove projects from the quick search.

I will try this after trying the "hide" option. On paper, sounds like it's exactly what I need!
