I'm looking to see if there is a way to grab the X-headers in the email headers and assign specific ones to custom fields when an issue is created by email. We have our phone system sending VM notifications into a shared mailbox in o365 and using JIRA to sPOP them into a project. There is a lot of valuable information inside the X-headers on each of these email notification that would be great to place into custom fields.

you can check out the Email functionality extending plugins on the marketplace. If you nothing is suitable, you can post process your news incoming issues over the REST API.
