Is there a way to list unique user label or dropdown values by user on the Task page?

For a given Task, I want to allow other team members to comment and add their own value to a specific field. For example, I would create a field called "Sentiment", which can be either "Positive +" or "Negative -". This field is subjective, and I want to be able to track what value each user who comments on the given Task thinks. Ideally we could filter based on what value anyone gives.

Welcome to the Atlassian Community!

With the available custom fields in Jira, I’m afraid to say that it’s not possible to use one of them for the option you need. 

Users can edit custom fields on tickets, but then it will overwrite the previous value and it will only be possible to view who changed it on the ticket history.

If you have any example of a similar feature to share with us it will be great, so we can check if there is a workaround for that.
