Can you add an additional column to a board when using the project management template.?

Alternatively can you add a due date to a Agillity template?

Yes.  The project templates are truly templates - they get used at the time of project creation, and then they have nothing else to do with it.  So you can re-configure the project to whatever shape you want after creating it.

The project type continues to matter though, as business projects get automatic boards, Software projects get Scrum and Kanban, and Service Desk projects get portals etc.

To add a new column to a board for a business project, add a new status to the workflow(s) in use in the project.

To add the due date to a Software board, add it to the issue's screens, check it's not hidden by the field configuration, and then add it to the card/view definitions in the board configs.

For an Agility project, I don't think it supports all the fields yet, but if it does, it will be similar to the Software boards - make it available to the issue, then configure the board.
