Tickets are organized on the Jira board by the oldest, is it possible to have the most recent on top always by default? Something liker ordering from A to Z or Z to A. Thanks

That is possible for a company-managed project's board, where the project admin / filter owner can change the ORDER BY for the board's filter to what is needed:

However if that is done, you can no longer drag-and-drop issues on the board or backlog to change their ordering. The filter must be ORDER BY Rank ASC for drag-and-drop to work.
If you are using a team-managed project, the board filter cannot be changed, and so the ordering cannot be changed.

You can order your tickets by absolutely any criteria you wish! What you'll want to do is:
This change will order it by the key (CSM-1, CSM-2, CSM-#) but descending order, so the biggest/most recent is first (CSM-3, CSM-2, CSM-1).

@Rui Passos Welcome! Are you referring to a dasboard ? Ig so, what gadget are you using ?
Commonly gadget are based on filters and you might try to sort the filter that the gadget is using ?
