Hi , We're starting to use releases. We have 2 different projects in Jira, but want to associate an Epic from 1 project with a release in another one. Is that possible

Releases are project-specific so it is not possible to have issues from different projects in the same release.
Your post tags indicate you are using a Premium subscription. With that subscription you could leverage the Plans feature to manage a Cross-Project Release. Refer to the Plans documentation for more information.

Releases (versions) are defined in each project, and you can only assign an epic to a release (version) from the project the epic belongs to.
But what you can do is to define the same release in both projects (like "Version 1.0") and set your epics/issues "Fix version" to it.
Then, use JQL filters by release name such as Fix Version = "Version 1.0". This will return the issues from both projects that have "Version 1.0".
