Is it possible to group issues with a specific label? for instance, status "X" and status "Y" in one label "Z".

This question is in reference to Atlassian Documentation: Adding the Pie Chart Gadget

Not for the purposes of the chart - X and Y are two different values.

You could automate the workflow, set a custom field to a value at the right times in the workflow, and use that in the chart instead.
