Is it possible to create one view so that I can track progress for all projects within my org?

I need the ability to create a single overview of each project and/or task for my organization. I am looking for a way that gives me the 20k-foot view of all projects with the ability to drill down and identify bottlenecks or task saturation. Is this possible?

Since you're on Jira Premium, you may want to have a look at Advanced Roadmaps. This is Atlassian's very own view for long-term planning and high-level, cross-team overviews. It is a very powerful tool, and thus may be a little overwhelming at first - but if you want to stick with the built-in features, this is likely the way to go. 

Alternatively, and as already suggested by previous answers, there are a number of Marketplace Apps available that can help with your use case. You may already know that you can trial any app for free for 1 month, and depending on the size of your size, it may be free forever. So if an app is an option for your, perhaps try a few and see which works best for you.

To offer another app recommendation, I think you'd like the app that my team and I are working on, JXL for Jira.

JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of advanced features, including support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting. With these, you can build powerful, interactive reports like the one below in just a couple of clicks:

This is really just one example - there's virtually no work setup that you can't model in JXL. As you can see above, you can easily drill down into the details, e.g. from cross-project initiatives, down to projects, and ultimately to project-level issues.

I would recommend creating custom Jira dashboards with the necessary gadgets in-place for tracking your agile projects. 

Be aware that our Great Gadgets app offers a set of gadgets that you could find useful for this: release/project burndown chart with ETA, velocity, KPIs, etc...

Welcome to the Atlassian Community!

Here are two quick things you can try

1) You can try using the filter option on the right-hand side to give you a tailored view to prevent bottlenecks. ("Due this week" is one filter option, but there are others you can choose from)

2) You can also try the "Group by" option that allows you to group tasks by priority, assignee, or category.

If playing around with the filters or group by option isn't enough, consider visiting the Atlassian marketplace for an app that can better give you that "20k-foot view" you want. 

Visor is one app you can try; it securely connects to your Jira data so you can create Custom Views, color code your roadmaps, whatever color you want, and create specific views to track multiple projects using JQL.
