Is it possible to create categories within one space?

Is it possible to create categories that only apply within one space? Essentially, I want a way to organize tasks within one space (my personal to-do list). I'm able to add a "label" to the task denoting a certain project, but then I can't organize the tasks by that label within the Board. Am I able to use "categories" for this purpose or are categories meant to be above the space level and apply to the entire organization?

What is the type of your personal space? Get that information by clicking the ... button next to the space name. 

The options available to you will vary depending on the space type and what level of admin access you have to the space or Jira overall.

The native Labels field is designed so that any value used in it in any project becomes available globally for all projects. So you cannot create values that are project specific within that field or other Labels type fields.

There is a field available in Software Spaces - Company Managed that is a multiple selection field where values are defined per space by each space's Administrator. That field is named Component.

Otherwise in Company Managed project it would require Jira Administrator access to create a field and define options in it that would be accessible only to a specific space.

If the space type is Team Managed then the users designated in the Administrators role for that space can create space-specific custom fields. In that case a single or multi-select field could be created for just that space and options set for that field.

Thanks for the quick reply and for your helpful insight! It's a Business Space, Team-managed. I was able to create a custom-field, which I called "Project." Is there any way I can then group my tasks by this field? See attached screenshots.

It is not possible to add more options to the Group list in Business projects, unfortunately. There is a change request for that here, to which you can add your vote:

Within Business projects there is a built-in field called Category. You can see it in the Group options.

This field is unique to Business projects. It is a single-select list field and the values are project-specific.

To add values to the list for the individual project go to the List tab.

For any existing issue click in the Category column.

Begin typing in the name of a new category. You will any current matches appear below and/or a match with the text (new category) shown after it.

If you want to create a new option, finish typing in the full name for the new option and then click the entry that includes (new category) . If you want to assign one of the existing option values to the current issue you would click on that value in the list.

If you use the built-in Category field then you will be able to group by that in the board.

In addition to what said by @Trudy Claspill , if your space is a company-managed Business space, you can use the field "Category" that works for the purpose:

Anyway this kind of field are independ to the Category at Space level; this last one is at space level, the others are at work item level.
