Invite user for a single project only (Free Jira)

I'm trying out Jira cloud right now, on a free plan. I've created several test projects. In the future, it will be used mostly by me and maybe 1-2 more people.

Need to add the user to a single project, but I'm not able to fine-tune the granular permissions. So any user I invite can see all other projects.

Is there any workaround to fix that?

Permissions can and should be set at the Project level - project settings > permissions. Likely what you will see is that the default permissions are granted to a role and all users are in that role, e.g. jira-users or similar. you can adjust this by removing certain users from that role. you can use groups or roles and add users to groups or roles to control the permissions.
