I guess they are not displayed because, they do not have values. Edit old issues and set the new fields. In this case you will these fields in the view screen.
How do you edit old issues? I can't see anywhere that enables me to do this.

I did add values to the custom fields (they are custom drop-downs with multiple menu items). This is a new next-gen project and all the issues in it are new.

I am facing similar issue with Next-gen projects.
I have added custom field and added values to it, and also set to display in all issue types. But when creating new issue or editing issue, custom field is not displayed.
Is there any other setting that needs to be configured for next-gen projects?

Same here. Even if that were the case that it is due to null values, I can't add a value to a field if the field is never displayed!

I had an extensive play around with this, the only way I got these fields to show was to delete all the issue types and custom fields, then add a new issue type and create the new fields and add them all at once - without exiting out of the settings. If I left the settings and returned any fields added later wouldn't show. (I also ensured I was on the Board as an Admin).
Luckily, I only had test stories in the backlog - this approach isn't workable if you already have items in your backlog.
It seems very buggy to me, I have returned to classic templates until the next-gen ones are more fully realised and robust.

I am having the same problem. Really excited to use Jira next gen and like the simplicity, but it is unusable until this problem is fixed.
