We have an sandbox and I was wondering if it is possible to test Platform experiences in the Sandbox jira and not in production?

Welcome to Atlassian Community!

Yes, you can join the EAP and only enable it on your Sandbox instance. If you read the KB about it it is mentioned that the EAP has to be enabled on each instance you have. When we joined I think it stated that you could only do it on a Sandbox environment due to the limitations in support for certain compliance features.
