In JIRA, once a fix version is released, can you attach stories to it?

I wanted to know if stories could be attached to a fix version once it has been released. Would really appreciate if someone could help with this.

Yes, they can. Once you archive a version, you can't add it to more issues, just releasing it lets you carry on using it.
