We have 3 teams (backend, frontend, and mobile) that share many of the same Epic objectives. I do not want to create 3 different epics, one per project, because that doesn't make sense for organization purposes.
How can I allow an epic to span multiple projects?

You can do that, create a project that will contain Epics and then create a board that will include all the projects in scope include the one with Epics.
It will not work with Next-gen projects though.

Yes use classic projects if you want to do that.

Yes, an Epic can be linked it issues across multiple projects for Classic Software Projects.

In my testing, no you cannot link multiple project issues to a Next-gen Epic. Only issues on that Next-gen project can be linked to that Epic.
