I want to add "Severity" field to my board, so I can choose the severity when I create a ticket.
I already noticed there are several field all related to "Severity", but I don't know the difference.

Those “Severity” fields you see are custom fields.
They just share the same name, but the field type is different for each one — for example Single select, Multi select, Cascading select, etc.
That’s why they look similar. You only need to choose one Severity field with the field type that fits your use case like single select or whatever types that are available and use that on your create screen.

You already have the Severity custom field, but it is not added to the Create screen, which is why you can’t select it when creating a ticket.
To add the Severity field when creating an issue:
Go to Jira settings → Issues
Select Screens
Open the Create Screen used by your project and issue type
Click Configure
Click Add field and select Severity
Save the changes
After this, the Severity field will appear on the Create Issue screen, and you’ll be able to choose a value.
If you don’t have Jira Admin permissions, ask your Jira administrator to add the field for you.
