We're in the midst of getting teams to transition over to Jira and I've been mapping out the bug life cycle. On creating a new project, there doesn't seem to be a spot to correctly map out the bug life cycle, plus implement auto-assigned issues. Please help!

You can mark this as resolved. I didn't have global Jira Admin permissions, but only on the project level. This has been addressed by giving me global permission instead of "every project.
