I've tried looking for it but there's nothing pointing me to where I can locate the closed sprints and restore them.
Also why does the tasks that are assigned to a sprint disappear when the sprint is closed?

Welcome to the Atlassian community.
If you want to reopen a closed sprint go to the Reports option for you board. Select the Sprint related report. In that report select the closed sprint. You should see a ... button in that report. If you click that button you should see a "Reopen" option.

What do you mean by the tasks "disappear"? Where are you expecting to see those tasks after you close the sprint?
Issue that are completed during a sprint will no longer display in the backlog when the sprint is closed. The issues still exist and can be accessed with direct links, but using the issue search screen, or through the Issues navigation option associated with the board.
When closing a sprint, for the tasks that were not completed you will be presented with the option to return them to the backlog or add them to another sprint.
I have finally discovered the options.
The tasks disappeared means they are no longer on the board. I wasn't able to see them in the Done column of my board.

When a sprint is closed all "done" issue are indeed removed from the board. By closing the sprint you are telling Jira that you no longer need to see those issues on the board unless you have added the incomplete issues to another active sprint.
