I am the Administrator for a Project but I can't edit Workflows or Screens, why?

I'm the only administrator on the project. I've checked in the Users & Roles. I still can not edit the workflows or schemes. Why?

Jira has two types of projects - Company-managed and Team-managed.

Administrators of Team-managed projects can amend everything in them, but Company-managed projects are controlled by Jira admins, not project admins.  CMPs use a set of shared schemes, as you mention, for configuration, ones that give your organisation structure and standards.  You can't allow projects to go changing these because it will affect other teams.

You'll be able to change components, versions, and who can use your projects in what roles, but you can not change schemes - these are likely to be shared and standardised.

TLDR: you need to ask your Jira admins to change schemes if they are not right for you.

Thank you for your help. Sounds like only Jira admins (not project admins) can change schemes/workflows. How do I know who my Jira admin is?

Yes, that's what I said.  You will need to ask other users who the admins are.  I'd start with the person who gave you the login, you had to ask for project admin rights, or who asked you to use Jira.
